Sauerkraut Recipes

This recipe is my favorite! It always comes out crispy and delicious, adding a beautiful splash of color to any dish. For this easy to make sauerkraut you will need the following ingredients:

1 Head Green Cabbage
1 Head Purple Cabbage
2-3 tbsp Sea Salt
2-4 tbsp Fresh Ginger
1 Lemon Squeezed
1-2 cups Water
1 Starter Culture such as Caldwell’s Cultured Vegetable Starter or Body Ecology Starter Culture (Optional but highly recommended to prevent molds and to ensure you have the right healthy cultures to start off your sauerkraut making!)

TIP: when you make your next batch you can use some of this batch in order to transplant the healthy cultures into your future batches!

You can’t go wrong with good old-fashioned sauerkraut. So crispy and delicious with any meal! Please follow the directions shown on my How to Ferment page. Here’s what you will need to enjoy this amazing sauerkraut:

1 Head Cabbage
1 Tbsp Sea Salt
Fresh Dill (optional)
Water (enough to submerge)
1 Lemon
1 Starter Culture such as Caldwell’s Cultured Vegetable Starter or Body Ecology Starter Culture (Optional but highly recommended!)

This recipe is AMAZING and a great way to sneak lots of extra vegetables into your diet! It is delicious and full of life! You can’t go wrong…

The Veggie Mix:
2 Heads Cabbage
7 Carrots
1 Lg Head Broccoli (and stem)
2 Onions (finely shredded)
2 Bunches of Dinasour Kale (Collards, Curly Kale, Bok Choi work too…)

The Brine:
3 Squeezed Lemons
1/2 cup Apple Cider Vinegar
1 Bunch of Dill
4-5 Cloves Garlic
3 inches of Fresh Ginger
3-4 tbsp Sea Salt
3-4 cups of Water
Cayenne (optional)
1 Starter Culture such as Caldwell’s Cultured Vegetable Starter or Body Ecology Starter Culture (Optional but highly recommended!)

Using the same method described on my ‘How to Make Sauerkraut’ page, after shredding, chopping and dicing, simply combine everything together, but taking note that this will yeild about 5 Liters of fermented deliciousness. Once you get the hang of it, have fun trying all sorts of veggie combinations! I love hearing about new ideas and sauerkraut successes. Enjoy!
